When I heard that we would be getting snow, I decided to make a dish that is hearty yet low in calories and fat.
The beauty of the recipe is that it takes very little time (15 mins.) to prepare and if you have a slow cooker all you have to do is put all the ingredients in and let it cook for 8 hrs. This can be put together before you leave for work and when you come home you'll have a nice dish ready to eat.
If you are like me you might be thrown off by the name of the recipe and not even give it a chance. When I first made it I was pleasantly surprised and can see that it can be tweaked to make it very spicy according to your taste. It is a dish that goes well with red and/or white wine.
Stuffed Pepper Sour
for Slow Cooker
^ 1 lb. ground turkey (93% lean/7% fat)
^ 1 cup chopped onion
^ 1 tsp minced fresh garlic
^ 28 oz can diced tomatoes with juice
^ 6 oz can tomato paste
^ 4 cups low sodium chicken broth
^ 3 cups chopped green pepper
^ 2/3 cup uncooked rice (white or brown)
^ 2 Tbsp brown sugar packed
^ 1 tsp dried basil
^ 1/4 tsp ground cinnamon
^ Ground black pepper to taste
In a large skillet, cook turkey, onion and garlic over medium heat until browned.
Drain any juices and transfer mixture to a slow cooker.
Add remaining ingredients and stir gently to mix.
Cook on low for 8 - 9 hrs.
Add water to thin if necessary.
Makes 6 (2-cup servings)
